When I did the 10 day clean eating challenge, one of the biggest difficulties I had, was giving up the coffee creamer I loved so much. However, after reading the label of the store-bought creamer, I was shocked and appalled... and determined not to pour that concoction in my coffee anymore.
I did some research and tried a couple of different options... coconut milk based options, almond milk options. They were not awful, but I didn't look forward to pouring either one in my beloved coffee in the morning. Soy milk was not an option under my clean eating plan, so I realized I'd have to make my own.
After several tries, this is the best clean coffee mixture I've made. Measurements are approximate and can be adjusted to suit your own taste.
- 1 cup almond milk - flavored or unflavored
- 1/3 cup organic half and half
- 3 teaspoons real vanilla
- 1 teaspoon unsweetened cocoa
- 2 teaspoons organic unprocessed cane sugar or organic honey
Shake vigorously to combine. You'll also need to shake it each time you pour it into your coffee. I considered cooking it and letting it cool which would keep it better combined but I'm fine with the morning shake! You can also reduce the vanilla and add other flavors like almond extract. You can also omit the cocoa if you like. This is a great recipe to play with. I personally prefer the unflavored almond milk, but K3 likes the vanilla flavor so that's what I had on hand for this batch!
So there you are. No guar gum, no hydrogenated oils, no additives.
