The Best Christmas Cookies EVER

Okay... when my mother gave me this recipe she made me promise not to give it out. I've adhered to her wishes faithfully over the years. However, I've come to believe that recipes are best shared and I've decided to share this one. This is the first cookie I bake during the holiday season and the most requested. This is the cookie my girls always wanted to leave for Santa! I swear, these cookies could bring about world peace or world domination depending on how they're wielded! Please, use them wisely.

This recipe is doubled and makes a lot.

Asthmagirl's Chocolate Snowballs

Cream together three sticks of butter and 1 cup sugar. Add 2 eggs and 4 tsp vanilla. Blend. Add 4 cups flour and 1 tsp salt. Then add about 1/2 cup finely chopped pecans and 1.5 bags of Mini Nestle Morsels. Don't even think about using a big chip. These were made for minis! You can increase the nuts and decrease the minis or fore go the nuts altogether and just use chips. This dough will be very stiff. You may have to work it with your hands to get all the nuts and chips blended with the dough.

Roll out into small balls and place on parchment papered cookie sheet. Bake for about 15 minutes in a 350 degree oven. They should not brown at all on top. The tops will begin to look less shiney as they become ready and if you lift one you should see it barely turning golden on the bottom.

Wait about one minute and then begin coating in powered sugar. I pour half a bag of powdered sugar in a large gallon ziplock and scoop about half a sheet of cookies in, then fold the bag over and gently roll it back and forth. Pull up your sleeve and start fishing cookies out, rotating the bag to get your hand underneath the little demons. Place in receiving bowl or dish. Add more powdered sugar, add more cookies. Makes a huge mess, but it's so worth it.

Eat at will. (K3 is hand model!)
